  • 4 boneless, skinless chicken breasts (67 ounces each)

  • 3 tablespoons unsalted butter, divided

  • 2 tablespoons olive oil

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • 1 teaspoon dried parsley

  • ½ teaspoon dried thyme

  • ½ cup chicken broth (low sodium)

  • ½ cup heavy cream

  • ¼ cup grated Parmesan cheese

  • 2 teaspoons Worcestershire sauce

  • 2 teaspoons soy sauce

  • 1 tablespoon lemon juice

  • Optional garnish: fresh parsley or chives, lemon wedges


Instructions

  • Pat chicken breasts dry, then pound to an even ¾-inch thickness. Season with salt, pepper, paprika, garlic powder, onion powder, parsley, and thyme.

  • Heat a cast-iron skillet over medium-high. Add olive oil and 1 tablespoon butter.

  • Sear chicken 4–5 minutes per side until golden. Remove and set aside.

  • Lower heat to medium. Add 1 tablespoon butter. Stir in chicken broth, Worcestershire sauce, soy sauce, and lemon juice. Scrape up browned bits.

  • Stir in heavy cream and Parmesan. Simmer 2–3 minutes until slightly thickened.

  • Return chicken to skillet. Spoon sauce over chicken. Simmer 5 minutes until chicken reaches 165°F (74°C).

  • Stir in remaining 1 tablespoon butter for a silky finish. Garnish and serve hot.

  • Use cast-iron for the best sear and flavor.

  • Deglaze properly to pull up all the browned bits—they add depth.
