Description
This Thai Peach Chicken is a quick and flavorful skillet dish that combines succulent chicken with sweet peach slices, fresh herbs, and bold Thai flavors, perfect for weeknight dinners.

- 1 tablespoon peanut or coconut oil
- 1 ½ lb chicken breast boneless

- cut into quarters
- 1 teaspoon salt
- 1 onion thinly sliced
- 2 cloves garlic minced
- 2 tablespoon fresh ginger minced
- 1 398 ml can California cling peach slices
- 1 tablespoon honey
- 2 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon rice vinegar
- 1 tablespoon Thai chilli sauce
- juice of one lime
- 1 teaspoon dried lemongrass
- 1 tablespoon cornstarch
- 1 red bell pepper cored and thinly sliced
- ¼ cup chopped peanuts
- 2 tablespoon fresh cilantro chopped (or use parsley or basil)
Instructions
- In a large skillet, heat the peanut or coconut oil over medium heat.
- Add the chicken quarters and season with salt. Cook until browned and cooked through, about 6-7 minutes, flipping halfway.
- Remove chicken from skillet and set aside.
- In the same skillet, add the onion, garlic, and ginger. Sauté until fragrant and translucent, about 3-4 minutes.
- Stir in the peach slices and cook for another 2-3 minutes.
- In a small bowl, mix the honey, soy sauce, fish sauce, rice vinegar, Thai chilli sauce, lime juice, and dried lemongrass. Add to the skillet.
- Return the chicken to the skillet, coating it with the sauce. Allow to simmer for an additional 5 minutes.
- If desired, mix cornstarch with a bit of water and add to the skillet to thicken the sauce.
- Finally, add the sliced red bell pepper and cook for another 2 minutes.
- Serve hot, topped with chopped peanuts and fresh cilantro.
Notes
For a kick of heat, adjust the amount of Thai chilli sauce to your taste. This dish pairs well with jasmine rice or quinoa.
