This Thai Peach Chicken is a quick and flavorful skillet dish that combines succulent chicken with sweet peach slices, fresh herbs, and bold Thai flavors, perfect for weeknight dinners.


Ingredients

  • 1 tablespoon peanut or coconut oil
  • 1 ½ lb chicken breast boneless
  • skinless

  • 1 teaspoon salt
  • 1 onion thinly sliced
  • 2 cloves garlic minced
  • 2 tablespoon fresh ginger minced
  • 1 398 ml can California cling peach slices
  • 1 tablespoon honey
  • 2 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon Thai chilli sauce
  • juice of one lime
  • 1 teaspoon dried lemongrass
  • 1 tablespoon cornstarch
  • 1 red bell pepper cored and thinly sliced
  • ¼ cup chopped peanuts
  • 2 tablespoon fresh cilantro chopped (or use parsley or basil)

Instructions

  1. In a large skillet, heat the peanut or coconut oil over medium heat.
  2. Add the chicken quarters and season with salt. Cook until browned and cooked through, about 6-7 minutes, flipping halfway.
  3. Remove chicken from skillet and set aside.
  4. In the same skillet, add the onion, garlic, and ginger. Sauté until fragrant and translucent, about 3-4 minutes.
  5. Stir in the peach slices and cook for another 2-3 minutes.
  6. In a small bowl, mix the honey, soy sauce, fish sauce, rice vinegar, Thai chilli sauce, lime juice, and dried lemongrass. Add to the skillet.
  7. Return the chicken to the skillet, coating it with the sauce. Allow to simmer for an additional 5 minutes.
  8. If desired, mix cornstarch with a bit of water and add to the skillet to thicken the sauce.
  9. Finally, add the sliced red bell pepper and cook for another 2 minutes.
  10. Serve hot, topped with chopped peanuts and fresh cilantro.

Notes

For a kick of heat, adjust the amount of Thai chilli sauce to your taste. This dish pairs well with jasmine rice or quinoa.
