Description

Delight your guests this Thanksgiving with fluffy brioche doughnuts filled with a creamy pumpkin cheesecake filling and tossed in pumpkin spice sugar.


Ingredients

  • 2 ¼ tsp active dry yeast
  • 250g whole milk lukewarm
  • 4 Tbsp (50g) sugar
  • 565g all-purpose flour
  • 1 tsp salt
  • 2 eggs at room temperature
  • 1 tsp vanilla bean paste
  • 100g unsalted butter at room temperature
  • Neutral Oil for Frying
  • 200g granulated sugar
  • 1 ½ tsp pumpkin pie spice
  • 280g pumpkin puree
  • 450g cream cheese softened
  • 100g powdered sugar
  • ½ tsp vanilla bean paste
  • 1 tsp ground cinnamon
  • 1½ tsp pumpkin pie spice
  • Pinch salt

Instructions

  1. In a small bowl, combine the active dry yeast and lukewarm milk; let it sit for about 5 minutes until foamy.
  2. In a large mixing bowl, combine the sugar, flour, and salt. Create a well in the center and add the eggs, vanilla bean paste, and the yeast mixture.
  3. Mix until combined, then knead in the softened butter until the dough is smooth and elastic.
  4. Cover the dough and let it rise in a warm place until it has doubled in size, about 1 hour.
  5. Punch down the dough and roll it out on a floured surface to about 1/2 inch thick. Cut into doughnuts using a doughnut cutter.
  6. Place the cut doughnuts on a floured baking sheet and let them rise for another 30 minutes.
  7. Meanwhile, prepare the pumpkin cheesecake filling by mixing pumpkin puree, cream cheese, powdered sugar, vanilla paste, cinnamon, pumpkin pie spice, and a pinch of salt until smooth.
  8. Heat neutral oil in a deep fryer or pot to 350°F (175°C). Fry the doughnuts until golden brown, about 2-3 minutes per side.
  9. Remove the doughnuts and drain on paper towels before tossing them in pumpkin spice sugar.
  10. Fill each doughnut with the pumpkin cheesecake filling using a pastry bag or injector. Serve warm or at room temperature.

Notes

These doughnuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
