- 1/2 cup sour cream
- 1 cup blueberries

Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine the sugar, egg, vegetable oil or melted butter, milk, and vanilla. Mix until well combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the sour cream and blueberries gently.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Sprinkle with sugar on top if desired.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
