  • 1/2 cup sour cream
  • 1 cup blueberries
  • About 1 tablespoon white sugar for the top (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the sugar, egg, vegetable oil or melted butter, milk, and vanilla. Mix until well combined.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the sour cream and blueberries gently.
