Wet Ingredients:

  • 10 tbsp (140 g) unsalted butter, softened
  • ½ cup (110 g) brown sugar
  • ½ cup (100 g) granulated sugar
  • 1 large egg (room temperature)
  • ¼ cup (60 ml) molasses
  • ½ tsp vanilla extract

Dry Ingredients:

  • 2 cups (284 g) all-purpose flour
  • 1 ¼ tsp baking soda
  • ½ tsp salt
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ⅛ tsp ground cloves (optional)

Add-ins & Coating:

  • ½ cup (70 g) chopped crystallized ginger (optional)
  • ⅓ cup (65 g) granulated sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add egg, molasses, and vanilla extract. Mix until smooth.
  4. In a separate bowl, whisk flour, baking soda, salt, ginger, cinnamon, and cloves.
  5. Gradually mix dry ingredients into wet ingredients until combined.
  6. Fold in crystallized ginger if using.
  7. Scoop dough into balls and roll each in granulated sugar.
  8. Place on baking sheet, spacing evenly.
  9. Bake for 8–10 minutes, until edges are set but centers remain soft.
  10. Cool on rack before serving.

Notes

  • Do not overbake—slightly soft centers = perfectly chewy cookies.
