Wet Ingredients:
- 10 tbsp (140 g) unsalted butter, softened
- ½ cup (110 g) brown sugar
- ½ cup (100 g) granulated sugar
- 1 large egg (room temperature)
- ¼ cup (60 ml) molasses
- ½ tsp vanilla extract
Dry Ingredients:
- 2 cups (284 g) all-purpose flour
- 1 ¼ tsp baking soda
- ½ tsp salt
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ⅛ tsp ground cloves (optional)
Add-ins & Coating:
- ½ cup (70 g) chopped crystallized ginger (optional)
- ⅓ cup (65 g) granulated sugar (for rolling)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Add egg, molasses, and vanilla extract. Mix until smooth.
- In a separate bowl, whisk flour, baking soda, salt, ginger, cinnamon, and cloves.
- Gradually mix dry ingredients into wet ingredients until combined.
- Fold in crystallized ginger if using.
- Scoop dough into balls and roll each in granulated sugar.
- Place on baking sheet, spacing evenly.
- Bake for 8–10 minutes, until edges are set but centers remain soft.
- Cool on rack before serving.
Notes
- Do not overbake—slightly soft centers = perfectly chewy cookies.
- Chill dough for 30–60 minutes for thicker cookies.
