Ingredients

  • 1 lb. cod fillets
  • 1/3 cup almond flour
  • 1/2 tsp salt
  • 23 tbsp extra virgin olive oil
  • 2 tbsp grapeseed oil
  • 3/4 cup chicken stock
  • 3 tbsp lemon juice
  • 1/4 cup capers
  • 2 tbsp fresh parsley
  • chopped

Instructions

  1. Season the cod fillets with salt and coat with almond flour.
  2. In a pan over medium heat, heat the olive and grapeseed oils, then add the cod fillets and cook until golden brown, about 4-5 minutes per side.
  3. Remove the cod and set aside. In the same pan, add chicken stock, lemon juice, and capers; simmer for a few minutes.
  4. Return the cod to the pan and spoon the sauce over it. Cook for an additional 2-3 minutes until heated through.
  5. Garnish with fresh parsley and serve immediately.
