- 1 lb. cod fillets
- 1/3 cup almond flour
- 1/2 tsp salt
- 2–3 tbsp extra virgin olive oil
- 2 tbsp grapeseed oil
- 3/4 cup chicken stock
- 3 tbsp lemon juice
- 1/4 cup capers
- 2 tbsp fresh parsley

Instructions
- Season the cod fillets with salt and coat with almond flour.
- In a pan over medium heat, heat the olive and grapeseed oils, then add the cod fillets and cook until golden brown, about 4-5 minutes per side.
- Remove the cod and set aside. In the same pan, add chicken stock, lemon juice, and capers; simmer for a few minutes.
- Return the cod to the pan and spoon the sauce over it. Cook for an additional 2-3 minutes until heated through.
- Garnish with fresh parsley and serve immediately.
Notes
For a gluten-free option, ensure that the almond flour is certified gluten-free. Serve with a side of steamed vegetables or over pasta.
