- 2 teaspoon vanilla extract
- ½ cup pure maple syrup
- 1 + ½ tablespoon coconut oil melted
- ¼ cup peanut butter
- 1 egg
- ⅓ cup cocoa powder
- 1 tsp baking powder
- ½ teaspoon salt
- ⅔ cup oat flour
- ½ cup chocolate chips
- ½ cup walnuts chopped
- ½ cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large mixing bowl, combine the mashed sweet potato, vanilla extract, maple syrup, melted coconut oil, peanut butter, and egg. Mix until well incorporated.
- In a separate bowl, whisk together the cocoa powder, baking powder, salt, and oat flour.
- Gradually add the dry ingredients to the wet mixture, stirring until combined. Fold in chocolate chips, walnuts, and mini marshmallows if using.
- Pour the brownie batter into the prepared baking pan, spreading it evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out mostly clean.
- Allow the brownies to cool in the pan for at least 10 minutes before lifting them out and cutting into squares.
Notes
