  • 2 teaspoon vanilla extract
  • ½ cup pure maple syrup
  • 1 + ½ tablespoon coconut oil melted
  • ¼ cup peanut butter
  • 1 egg
  • ⅓ cup cocoa powder
  • 1 tsp baking powder
  • ½ teaspoon salt
  • ⅔ cup oat flour
  • ½ cup chocolate chips
  • ½ cup walnuts chopped
  • ½ cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the mashed sweet potato, vanilla extract, maple syrup, melted coconut oil, peanut butter, and egg. Mix until well incorporated.
  3. In a separate bowl, whisk together the cocoa powder, baking powder, salt, and oat flour.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined. Fold in chocolate chips, walnuts, and mini marshmallows if using.
  5. Pour the brownie batter into the prepared baking pan, spreading it evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out mostly clean.
  7. Allow the brownies to cool in the pan for at least 10 minutes before lifting them out and cutting into squares.
