  • 7 grams ground cinnamon

  • 15 grams whole milk

Instructions

  1. Prepare the levain by mixing the starter, flour, and water, and let it sit overnight or for about 12 hours.
  2. In a large bowl, combine the prepared levain, whole milk, melted butter, and granulated sugar, mixing well.
  3. Gradually add the bread flour and salt, kneading to form a soft dough.
  4. Let the dough rise in a warm place until doubled, about 1 to 2 hours.
  5. While the dough rises, mix the brown sugar and ground cinnamon in a bowl.
  6. Preheat your oven to 350°F (175°C) and grease a bundt pan.
  7. Once the dough has risen, punch it down and divide it into small pieces.
  8. Roll each dough piece into a ball and dip them in the melted butter, then coat them in the cinnamon-sugar mixture.
  9. Layer the balls in the prepared bundt pan and sprinkle any remaining sugar mixture on top.
  10. Let the dough rise again for about 30 minutes.
  11. Bake for 30 minutes or until golden brown and cooked through.
  12. Allow cooling slightly before inverting onto a plate.
  13. If desired, mix powdered sugar and milk to create icing and drizzle over the top before serving.
