  • 2/3 cup Libby’s Pumpkin Puree

  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar

  • 2 large egg yolks
  • room temperature
  • 2 teaspoon vanilla extract
  • 1 2/3 cup + 1 tablespoon all-purpose flour
  • 2 1/2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup finely chopped chocolate bar or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the cold unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Add the pumpkin puree, egg yolks, and vanilla extract and mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, pumpkin spice, baking soda, and fine sea salt.
  5. Gradually incorporate the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chopped chocolate or chocolate chips.
  7. Drop large spoonfuls of dough onto the prepared baking sheet, spacing them well apart.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
