Ingredients

  • 8 oz mascarpone cheese softened
  • ¾ cup heavy whipping cream
  • ⅓ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¾ cup brewed espresso cooled
  • 1 tablespoon granulated sugar
  • about 1518 ladyfingers broken as needed to fit cups
  • cocoa powder for dusting

Instructions

  1. In a mixing bowl, combine softened mascarpone cheese, heavy whipping cream, granulated sugar, and vanilla extract. Whip until smooth and fluffy.
  2. Prepare the espresso soak by mixing brewed espresso with 1 tablespoon of granulated sugar until dissolved.
  3. Quickly dip each ladyfinger into the espresso mixture and place them in the bottom of your serving cups.
  4. Layer half of the mascarpone filling over the soaked ladyfingers in each cup.
  5. Repeat the process with another layer of dipped ladyfingers followed by the remaining mascarpone filling.
  6. Chill the cups in the refrigerator for at least 4 hours or until set.
  7. Before serving, dust the top with cocoa powder for a finishing touch.

Notes

For an authentic Italian flavor, use strong espresso and let the layers set in the refrigerator overnight for better taste and texture.
