Description

This Tomato Pie Recipe is irresistibly gooey and flavorful, packed with fresh tomatoes, two types of cheese, and aromatic herbs, all enveloped in a flaky crust.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (cold and cubed)
  • 1/4 cup ice water (more if needed)
  • 1/2 teaspoon salt
  • 4 cups fresh tomatoes (sliced)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh basil (chopped)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg (beaten)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix flour and salt, then cut in cold butter until crumbly.
  3. Stir in ice water gradually until the dough holds together.
  4. Roll out the dough and place it into a pie pan.
  5. Layer sliced tomatoes in the crust, sprinkling with salt, pepper, oregano, and basil.
  6. Sprinkle mozzarella and cheddar cheeses on top of the tomatoes.
  7. Pour the beaten egg over the filling to bind it together.
  8. Bake for 30 minutes or until the crust is golden and the cheese is bubbly.
  9. Allow to cool slightly before slicing and serving.

Notes

For an extra crispy crust, you can blind bake the crust for 10 minutes before adding the filling.
