- 1 cup all-purpose flour
- 1/2 cup unsalted butter (cold and cubed)
- 1/4 cup ice water (more if needed)
- 1/2 teaspoon salt
- 4 cups fresh tomatoes (sliced)
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/4 cup fresh basil (chopped)
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg (beaten)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix flour and salt, then cut in cold butter until crumbly.
- Stir in ice water gradually until the dough holds together.
- Roll out the dough and place it into a pie pan.
- Layer sliced tomatoes in the crust, sprinkling with salt, pepper, oregano, and basil.
- Sprinkle mozzarella and cheddar cheeses on top of the tomatoes.
- Pour the beaten egg over the filling to bind it together.
- Bake for 30 minutes or until the crust is golden and the cheese is bubbly.
- Allow to cool slightly before slicing and serving.
Notes
For an extra crispy crust, you can blind bake the crust for 10 minutes before adding the filling.
