Description

This Tomato Pie Recipe is a delightful summer dish that showcases the freshness of ripe tomatoes combined with creamy mayonnaise and cheese in a flaky pie crust.


Ingredients

  • 4 beefsteak tomatoes peeled and sliced thin
  • Salt and pepper to taste
  • 1 tbsp fresh basil or one teaspoon dried basil
  • 2 tbsp chopped chives
  • 1 cup heavy mayo preferably Duke’s
  • 1 cup grated cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the pie crust in a pie dish and blind bake for 10 minutes, then let it cool.
  3. Layer the sliced tomatoes in the crust, seasoning each layer with salt, pepper, basil, and chives.
  4. In a bowl, mix the heavy mayo and grated cheddar cheese until well combined, then spread evenly over the tomatoes.
  5. Bake in the preheated oven for 30 minutes or until the topping is golden and bubbly.
  6. Allow to cool for a few minutes before slicing and serving.

Notes
