Description

A refreshing Tomato Salad packed with flavor from fresh ingredients, perfect for a summer gathering.


Ingredients

  • Fresh cherry or grape tomatoes
  • Fresh mozzarella salad pearls
  • Extra virgin olive oil
  • Garlic
  • Red wine vinegar
  • Fresh basil
  • Fresh parsley
  • Dried oregano
  • Honey
  • Salt
  • Pepper

Instructions

  1. In a large bowl, combine the fresh cherry or grape tomatoes and mozzarella salad pearls.
  2. In a separate small bowl, whisk together the extra virgin olive oil, minced garlic, red wine vinegar, honey, salt, and pepper.
  3. Pour the dressing over the tomato and mozzarella mixture, and toss gently to coat everything evenly.
  4. Add the chopped fresh basil, parsley, and dried oregano, and give it another light toss.
  5. Serve immediately for the best flavor and texture.

Notes

For larger tomatoes, cut into bite-sized wedges and serve right away to prevent the dressing from becoming watery.
