Description

Torta Caprese is a rich and decadent Italian chocolate torte that showcases the intense flavors of dark chocolate and almond flour, making it a gluten-free dessert that’s sure to impress.


Ingredients

  • 200 g Dark chocolate
  • 200 g Butter
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Kosher salt
  • 3 tablespoon Cocoa powder plus more for the top
  • 5 Eggs carefully separated
  • 1 ¼ cups Granulated sugar
  • 1 ½ cups Almond flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. Melt the dark chocolate and butter together in a double boiler or microwave, stirring until smooth.
  3. Remove from heat and mix in the vanilla extract and kosher salt.
  4. In a separate bowl, whisk the egg yolks with the granulated sugar until pale and creamy.
  5. Fold the melted chocolate mixture into the egg yolk mixture, then add the almond flour and cocoa powder, blending until fully combined.
  6. In another bowl, beat the egg whites until stiff peaks form, then gently fold them into the chocolate batter.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30 minutes, or until the edges are set and the center is slightly wobbly.
  9. Allow the torte to cool completely in the pan before inverting it onto a serving plate.
  10. Dust with cocoa powder before serving and enjoy!
