Description

Torta del Nonno, or Grandfather’s Cake, is a rich and creamy dessert that combines the flavors of chocolate pastry cream with a delectable chocolate pie dough, creating a delightful treat perfect for any occasion.


Ingredients

  • 1 cup cream
  • 1 cup milk
  • 5 large egg yolks
  • 10 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 3½ tablespoons all purpose flour
  • 2½ ounces dark chocolate
  • 2¼ cups all purpose flour
  • 1 pinch salt
  • ½ teaspoon baking powder
  • ½ cup granulated sugar
  • 2 tablespoons unsweetened dutch processed cocoa
  • 1 large egg
  • 1 large egg yolk
  • ¾ cup butter cubed

Instructions

  1. In a saucepan, combine the cream and milk over medium heat until warm. In a separate bowl, whisk together the egg yolks, sugar, and vanilla. Gradually add the warm cream mixture to the yolk mixture while whisking continuously.
  2. Return the mixture to the saucepan and cook over medium heat, stirring constantly until the mixture thickens. Remove from heat and stir in the flour and chopped dark chocolate until smooth. Allow to cool.
  3. For the pie dough, in a large bowl, whisk together the flour, salt, baking powder, sugar, and cocoa. Add the cubed butter and mix until crumbly. In a separate bowl, whisk together the egg and egg yolk, then add to the flour mixture and combine until a dough forms.
  4. Roll out the dough and fit it into a pie dish. Pour the cooled pastry cream into the crust and chill in the refrigerator until set.
  5. Once set, slice and serve chilled, garnished with whipped cream or chocolate shavings if desired.
