- 2.75 lb rhubarb (trimmed and cut into 1/2-inch pieces)
- 2 cups granulated sugar
- 0.25 cup water
- 0.33 cup orange juice (no pulp)
- 1 tbsp orange zest
- 1 cinnamon stick
- 1 pinch salt
Instructions
- Combine the rhubarb, sugar, and water in a large pot and let it sit for about 30 minutes until the rhubarb releases some juices.
- Add the orange juice, orange zest, cinnamon stick, and salt to the pot.
- Bring the mixture to a boil over medium heat, stirring frequently to dissolve the sugar.
- Once boiling, reduce the heat and let it simmer for 20-25 minutes, stirring occasionally, until it thickens to your desired consistency.
- Remove from heat and discard the cinnamon stick. Allow the jam to cool slightly before transferring it to sterilized jars.
- Seal the jars and let them cool completely at room temperature before refrigerating.
Notes
For a smoother texture, blend the jam after cooking. This jam pairs wonderfully with toast, yogurt, or as a filling for pastries.
