Ingredients

  • 2.75 lb rhubarb (trimmed and cut into 1/2-inch pieces)
  • 2 cups granulated sugar
  • 0.25 cup water
  • 0.33 cup orange juice (no pulp)
  • 1 tbsp orange zest
  • 1 cinnamon stick
  • 1 pinch salt

Instructions

  1. Combine the rhubarb, sugar, and water in a large pot and let it sit for about 30 minutes until the rhubarb releases some juices.
  2. Add the orange juice, orange zest, cinnamon stick, and salt to the pot.
  3. Bring the mixture to a boil over medium heat, stirring frequently to dissolve the sugar.
  4. Once boiling, reduce the heat and let it simmer for 20-25 minutes, stirring occasionally, until it thickens to your desired consistency.
  5. Remove from heat and discard the cinnamon stick. Allow the jam to cool slightly before transferring it to sterilized jars.
  6. Seal the jars and let them cool completely at room temperature before refrigerating.

Notes
