Ingredients

  • 150 g Dark Chocolate
  • 150 g Butter or Margarine
  • 3 Free-range Eggs
  • 250 g Caster Sugar (Superfine Sugar)
  • 75 g Plain Flour (All-purpose Flour)
  • 40 g Cocoa Powder
  • 150 g Milk Chocolate
  • 75 g White Chocolate

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a baking dish.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth.
  3. In a separate bowl, whisk the eggs and sugar until light and fluffy.
  4. Combine the melted chocolate mixture with the egg mixture and mix well.
  5. Sift in the flour and cocoa powder, and gently fold until just combined.
  6. Chop the milk and white chocolate and fold them into the batter.
  7. Pour the batter into the prepared baking dish and smooth the top.
  8. Bake for 25-30 minutes until the top is set but the center is still fudgy.
  9. Allow to cool in the dish before slicing into squares.

Notes

For extra fudginess, do not overbake the brownies. Allow them to cool completely before cutting for cleaner edges.
