  • 2 1/2 cups graham crackers crumbs
  • 1/4 cup dark brown sugar
  • 1 teaspoon cinnamon
  • 1 stick melted butter
  • 12 tablespoons egg whites
  • 2 14 ounce cans sweetened condensed milk
  • 1 cup of key lime juice
  • 8 egg yolks
  • 1/2 cup sour cream
  • 8 oz cream cheese
  • 1/2 cup sweetened condensed milk
  • 1/4 cup key lime juice
  • 1/4 cup sour cream
  • 2 tablespoons granulated sugar
  • 1 1/2 cups heavy cream
  • 2 tablespoons sugar
  • 2 tablespoons key lime juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, dark brown sugar, cinnamon, and melted butter. Press the mixture into the bottom of a pie dish to form the crust. Bake for 10 minutes and let it cool.
  3. In another bowl, whisk together sweetened condensed milk, key lime juice, egg yolks, and sour cream. Pour this mixture into the cooled crust. Bake for another 15 minutes. Remove from oven and let cool to room temperature.
  4. In a separate bowl, beat together cream cheese, sweetened condensed milk, key lime juice, sour cream, and granulated sugar until smooth. Spread this over the baked layer and refrigerate for at least 2 hours.
  5. For the whipped layer, beat the heavy cream, sugar, and key lime juice in a separate bowl until soft peaks form. Spread this layer over the chilled layer of the pie.
  6. Chill the pie for an additional hour before serving. Garnish with lime slices if desired.

Notes

Make sure all your ingredients are at room temperature for a smoother mix. The pie is best served chilled and can be stored in the refrigerator for up to 3 days.
