Description

Description
Turtle Brownie Cheesecake is a decadent layered dessert featuring a fudgy brownie base, creamy cheesecake filling, buttery caramel, toasted pecans, and rich chocolate ganache. It combines the classic flavors of turtle candy with the indulgent texture of cheesecake.

Ingredients

Scale

Brownie Base

  • 1 box brownie mix, prepared according to package directions, or homemade brownie batter
  • Ingredients required for the brownie mix, if using a boxed mix

Cheesecake Layer

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup caramel sauce, plus more for topping
  • 1/2 cup mini chocolate chips, optional

Toppings

  • 1 cup toasted pecans, roughly chopped
  • 1/2 cup caramel sauce
  • 1/2 cup chocolate ganache
  • Flaky sea salt, optional

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a springform pan.
  2. Prepare the brownie batter according to the package directions, or prepare homemade brownie batter.
  3. Pour the brownie batter into the prepared pan and bake for about 15–20 minutes, until the edges are set and the center is still slightly soft. Do not overbake. Let the brownie base cool completely.
  4. Reduce the oven temperature to 325°F (160°C).
  5. Beat the softened cream cheese and sugar until smooth and creamy.
  6. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Fold in mini chocolate chips if desired.
  7. Pour the cheesecake filling over the completely cooled brownie base and smooth the top.
  8. Drizzle some caramel sauce over the cheesecake layer and gently swirl it with a knife.
  9. Wrap the outside of the springform pan with foil and place it in a water bath.
  10. Bake for 50–60 minutes, until the edges are set and the center still has a slight jiggle.
  11. Turn off the oven and let the cheesecake cool inside for about 1 hour, preferably with the door slightly ajar.
  12. Refrigerate for at least 4 hours or overnight.
  13. Before serving, drizzle with caramel sauce and chocolate ganache and sprinkle with toasted pecans. Add a pinch of flaky sea salt if desired.
  14. Slice and serve chilled.

Notes

  • Do not overbake the brownie layer; a slightly underbaked center keeps it fudgy.
  • Allow the brownie base to cool completely before adding the cheesecake filling.
  • Use room-temperature cream cheese and eggs for a smooth cheesecake batter.
  • Avoid overmixing the cheesecake batter to reduce the risk of cracks.
  • A water bath helps the cheesecake bake evenly and prevents cracking.
  • Toast the pecans before using them for a deeper, nuttier flavor.
  • For variations, use salted caramel, walnuts, almonds, or mini chocolate chips.
  • Store covered in the refrigerator for up to 4–5 days.
  • For longer storage, freeze the cheesecake without the toppings and add the caramel, pecans, and ganache after thawing.
