Description

Tuscan White Bean Soup is a hearty and flavorful dish featuring mild Italian sausage and fresh spinach, perfect for a comforting meal any time of the year.


Ingredients

  • 1 pound mild Italian sausage
  • 1 large yellow onion diced (about 1 ½ cups)
  • 3 ribs celery diced
  • 2 large carrots sliced into rounds
  • 2 teaspoons garlic minced
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper
  • ½ teaspoon ground black pepper
  • 4 cups (32 ounces) chicken broth
  • 2 cans (15.5 ounces each) Great Northern beans drained and rinsed
  • 2 cups (60 g) fresh baby spinach
  • ½ cup (119 g) heavy whipping cream
  • parsley chopped for garnish

Instructions

  1. In a large pot over medium heat, cook the Italian sausage until browned. Remove the sausage and set it aside, leaving the drippings in the pot.
  2. Add the diced onion, celery, and carrots to the pot. Sauté for about 5-7 minutes until the vegetables are softened.
  3. Stir in the minced garlic, tomato paste, Italian seasoning, crushed red pepper, and black pepper. Cook for an additional 2 minutes until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Add the drained Great Northern beans and the cooked sausage back into the pot. Simmer for about 20 minutes.
  5. Stir in the fresh baby spinach and heavy whipping cream. Cook for an additional 5 minutes until the spinach has wilted.
  6. Serve hot, garnished with chopped parsley.

Notes

You can substitute the Great Northern beans with Cannellini beans if desired. For a vegetarian version, omit the sausage and use vegetable broth.
