Tuscan White Bean Soup is a hearty and flavorful dish featuring mild Italian sausage and fresh spinach, perfect for a comforting meal any time of the year.

- 1 pound mild Italian sausage
- 1 large yellow onion diced (about 1 ½ cups)
- 3 ribs celery diced
- 2 large carrots sliced into rounds
- 2 teaspoons garlic minced
- 1 tablespoon tomato paste
- 1 teaspoon Italian seasoning
- ½ teaspoon crushed red pepper
- ½ teaspoon ground black pepper
- 4 cups (32 ounces) chicken broth
- 2 cans (15.5 ounces each) Great Northern beans drained and rinsed
- 2 cups (60 g) fresh baby spinach
- ½ cup (119 g) heavy whipping cream
- parsley chopped for garnish
Instructions
- In a large pot over medium heat, cook the Italian sausage until browned. Remove the sausage and set it aside, leaving the drippings in the pot.
- Add the diced onion, celery, and carrots to the pot. Sauté for about 5-7 minutes until the vegetables are softened.
- Stir in the minced garlic, tomato paste, Italian seasoning, crushed red pepper, and black pepper. Cook for an additional 2 minutes until fragrant.
- Pour in the chicken broth and bring to a simmer. Add the drained Great Northern beans and the cooked sausage back into the pot. Simmer for about 20 minutes.
- Stir in the fresh baby spinach and heavy whipping cream. Cook for an additional 5 minutes until the spinach has wilted.
- Serve hot, garnished with chopped parsley.
Notes
You can substitute the Great Northern beans with Cannellini beans if desired. For a vegetarian version, omit the sausage and use vegetable broth.
