- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1 pinch ground nutmeg
- 3 bananas (ripe or very ripe work best)
- ½ cup white sugar
- ⅓ cup butter
- melted
- ¼ cup lightly packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ¼ cup chopped walnuts (Optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, baking powder, baking soda, cinnamon, salt, and nutmeg.
- In another bowl, mash the bananas until smooth. Mix in the white sugar, melted butter, brown sugar, egg, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chopped walnuts if using.
- Spoon the batter into the muffin cups, filling them about 2/3 full.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
Notes
For extra flavor, try adding chocolate chips or dried fruit to the batter.
