Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, mix the flour, baking powder, and Greek yogurt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Stir until just combined.
- Fold in the vanilla extract and sprinkles, being careful not to overmix.
- Spoon the batter into the prepared muffin tin, filling each liner about ¾ full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool for a few minutes before transferring to a wire rack to cool completely.
Notes
For added sweetness, you can mix in a teaspoon of vanilla extract into the Greek yogurt.
