Instructions

  1. In a bowl, mix the flour and salt. In a separate bowl, whisk together the eggs, milk, water, melted butter, and vanilla extract. Gradually combine with the dry ingredients until smooth.
  2. Heat a non-stick pan over medium heat and lightly grease it. Pour a small amount of batter into the pan, swirling to create a thin layer. Cook for about 2 minutes on each side until golden. Repeat with remaining batter, stacking crêpes.
  3. For the filling, whip the heavy cream until soft peaks form. Gently fold in mascarpone or cream cheese (if using), speculoos spread, powdered sugar, and vanilla extract until well combined.
