Ingredients

- Elbow Macaroni Pasta
- Black Beans
- Kidney Beans

Instructions
- In a large pot, heat olive oil over medium heat and sauté the chopped onion, bell pepper, and carrots until they are tender.
- Add minced garlic, chili powder, cumin, and salt to the pot; cook for an additional 1-2 minutes until fragrant.
- Stir in the diced tomatoes, diced tomatoes with green chilies, and water, and bring the mixture to a simmer.
- Add elbow macaroni, black beans, and kidney beans to the pot; cover and cook according to pasta package instructions, stirring occasionally.
- Once the pasta is cooked and most of the liquid has been absorbed, remove from heat and stir in shredded cheese until melted and well combined.
- Serve warm, garnished with additional cheese if desired.
