Instructions
- In a saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Remove from heat and add the chopped white chocolate, butter, vanilla extract, and sea salt; stir until smooth and well combined.
- In a separate bowl, mash the raspberries with the granulated sugar to create a raspberry puree.
- Swirl the raspberry puree gently into the white chocolate mixture, being careful not to overmix.
- Refrigerate the mixture for about 1-2 hours or until firm enough to scoop.
- Once firm, use a melon baller or small scoop to portion the truffle mixture into small balls.
- Roll each truffle in the crushed freeze-dried raspberries to coat.
- Place the coated truffles on a parchment-lined baking sheet and refrigerate until set.
