Ingredients

  • 1 cup (about 80 grams) dried elderberries
  • 4 cups (960 ml) water
  • 2 cinnamon sticks (about 4 inches each)
  • 56 whole cloves
  • 1/2 to 3/4 cup (120180 ml) raw honey
  • 1 tablespoon fresh ginger
  • peeled and sliced (optional)

Instructions

  1. In a medium pot, combine the dried elderberries, water, cinnamon sticks, and whole cloves.
  2. Bring the mixture to a boil over medium heat.
  3. Once boiling, reduce the heat and let it simmer for about 30 minutes, or until the liquid reduces by half.
  4. Remove from heat and let it cool slightly.
  5. Strain the syrup through a fine-mesh strainer into a glass jar, discarding the solids.
  6. Once the syrup has cooled to room temperature, stir in raw honey to taste, and add fresh ginger if using.
  7. Seal the jar and store it in the refrigerator for up to 2-3 weeks.

Notes

Feel free to adjust the quantity of honey to suit your taste preference. This syrup can be taken by the spoonful or added to beverages for an immunity boost.
