- 10 Cuties mandarin oranges
- peeled and segmented
- 4 large fuji apples
- cored and diced
- 2 pomegranates
- arils removed
- 1 cup granulated sugar
- 1 cup water
- 2 cinnamon sticks
- 1 vanilla bean

Instructions
- In a medium saucepan, combine the sugar, water, cinnamon sticks, and vanilla bean along with its seeds. Bring to a boil over medium heat, stirring until sugar is dissolved.
- Reduce heat and simmer for 20 minutes. Remove from heat and let cool.
- In a large bowl, combine the mandarin oranges, diced fuji apples, and pomegranate arils.
- Once the dressing has cooled, remove the cinnamon sticks and vanilla bean, then pour it over the fruit salad. Toss gently to coat.
- Serve immediately or refrigerate for 30 minutes for the flavors to meld.
