- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon nutmeg
- 3 teaspoons ground cinnamon
- 1 cup white sugar
- 1 cup brown sugar
- 3 eggs
- 1 cup vegetable oil (or substitute with applesauce for half)
- 3 teaspoons vanilla extract
- 2 cups grated zucchini
- 1 cup chopped walnuts
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9×5 inch loaf pans.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, nutmeg, and cinnamon.
- In another bowl, beat together the white sugar, brown sugar, eggs, vegetable oil (or applesauce), and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the grated zucchini and chopped walnuts.
- Pour the batter evenly into the prepared loaf pans.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, let the zucchini bread cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Notes
For extra moisture, feel free to add more grated zucchini. This bread can also be frozen for later enjoyment.
