  • 1/3 cup + 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1 cup shredded zucchini
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine almond butter, maple syrup, coconut sugar (or brown sugar), eggs, and vanilla extract until smooth.
  3. Sift in the cocoa powder and baking powder, mixing until just combined.
  4. Fold in the shredded zucchini and chocolate chips gently until evenly distributed.
  5. Pour the batter into the prepared baking pan, spreading evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
