- Optional Dip: Lazy Tzatziki
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the grated zucchini with cottage cheese, eggs, breadcrumbs, pecorino cheese, scallions, Italian herb blend, salt, and pepper.
- Scoop the mixture onto the prepared baking sheet, forming fritters about 2 inches in diameter.
- Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
- Serve warm with Lazy Tzatziki if desired.
