Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup breadcrumbs
  • 1/3 cup grated pecorino cheese
  • 2 scallions
  • 1 tsp Italian herb blend
  • salt and pepper to taste
  • Optional Dip: Lazy Tzatziki

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the grated zucchini with cottage cheese, eggs, breadcrumbs, pecorino cheese, scallions, Italian herb blend, salt, and pepper.
  3. Scoop the mixture onto the prepared baking sheet, forming fritters about 2 inches in diameter.
  4. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
  5. Serve warm with Lazy Tzatziki if desired.
