These Zucchini Fritters are the perfect guilt-free snack, packed with high protein and low carbs, all made conveniently in an air fryer.
Ingredients

- 2 medium zucchini (about 400g)
- grated
- 1 teaspoon salt (for drawing out moisture)
- 2 large eggs
- 1/3 cup chickpea flour
- 2 tablespoons grated Parmesan
- 2 cloves garlic
- minced
- 1/4 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1 tablespoon fresh parsley
- chopped
- Olive oil spray
Instructions
- Grate the zucchini and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then squeeze out excess liquid.
- In a bowl, combine the grated zucchini, eggs, chickpea flour, Parmesan, garlic, black pepper, onion powder, and parsley. Mix until well combined.
- Preheat your air fryer to 180°C (350°F).
- Form the zucchini mixture into small patties and place them in the air fryer basket. Lightly spray with olive oil.
- Air fry for 10-12 minutes, flipping halfway through, until golden and crispy.
- Serve warm as a snack or appetizer.
Notes
Ensure to remove as much moisture from the zucchini as possible for crispier fritters. You can serve these with a yogurt dip or salsa for added flavor.
