Description

These Zucchini Fritters are the perfect guilt-free snack, packed with high protein and low carbs, all made conveniently in an air fryer.


Ingredients

  • 2 medium zucchini (about 400g)
  • grated
  • 1 teaspoon salt (for drawing out moisture)
  • 2 large eggs
  • 1/3 cup chickpea flour
  • 2 tablespoons grated Parmesan
  • 2 cloves garlic
  • minced
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1 tablespoon fresh parsley
  • chopped
  • Olive oil spray

Instructions

  1. Grate the zucchini and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then squeeze out excess liquid.
  2. In a bowl, combine the grated zucchini, eggs, chickpea flour, Parmesan, garlic, black pepper, onion powder, and parsley. Mix until well combined.
  3. Preheat your air fryer to 180°C (350°F).
  4. Form the zucchini mixture into small patties and place them in the air fryer basket. Lightly spray with olive oil.
  5. Air fry for 10-12 minutes, flipping halfway through, until golden and crispy.
  6. Serve warm as a snack or appetizer.

Notes

Ensure to remove as much moisture from the zucchini as possible for crispier fritters. You can serve these with a yogurt dip or salsa for added flavor.
