- 4 cups baby spinach
- ½ cooked chicken breast

Instructions
- Spiralize the zucchini to create noodles and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the halved cherry tomatoes and minced garlic; cook until the tomatoes are soft, about 3-4 minutes.
- Stir in the kosher salt, Italian seasoning, and black pepper.
- Add the baby spinach, cooked chicken, and frozen peas to the skillet; sauté until the spinach wilts and everything is heated through.
- Pour in lemon juice and zest, stirring to combine.
- Add the zucchini noodles and toss to combine, cooking for an additional 2-3 minutes until heated but still crisp.
- Drizzle with the remaining olive oil before serving.
