  • 1 teaspoon Italian seasoning
  • ½ teaspoon freshly ground black pepper
  • 4 cups baby spinach
  • ½ cooked chicken breast
  • chopped
  • ½ cup frozen peas
  • 2 lemons
  • juiced
  • 1 lemon
  • zested

Instructions

  1. Spiralize the zucchini to create noodles and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  3. Add the halved cherry tomatoes and minced garlic; cook until the tomatoes are soft, about 3-4 minutes.
  4. Stir in the kosher salt, Italian seasoning, and black pepper.
  5. Add the baby spinach, cooked chicken, and frozen peas to the skillet; sauté until the spinach wilts and everything is heated through.
  6. Pour in lemon juice and zest, stirring to combine.
  7. Add the zucchini noodles and toss to combine, cooking for an additional 2-3 minutes until heated but still crisp.
  8. Drizzle with the remaining olive oil before serving.

Notes

Feel free to add more vegetables or substitute the chicken for shrimp for a different flavor.
