Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking dish by greasing it lightly.
- Slice the zucchini and sprinkle with salt, then let it sit for about 15 minutes to draw out moisture. Pat dry with a paper towel.
- In a large mixing bowl, combine the drained zucchini, eggs, and Parmesan cheese until well mixed.
- Press the zucchini mixture into the bottom of the prepared baking dish to form an even crust.
- In a skillet, cook the ground beef, diced onion, and mushrooms over medium heat until the meat is browned and onions are soft. Drain excess fat.
- Stir in the pizza sauce, green bell pepper, oregano, garlic powder, and black pepper into the meat mixture.
- Spread the meat and veggie mixture evenly over the zucchini crust.
- Top with mozzarella and cheddar cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
- Allow to cool for a few minutes before slicing and serving.
Notes
For a vegan option, replace Parmesan cheese with nutritional yeast and use plant-based ground meat.
