  • Mushrooms
  • Dried Oregano
  • Garlic Powder
  • Black Pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish by greasing it lightly.
  2. Slice the zucchini and sprinkle with salt, then let it sit for about 15 minutes to draw out moisture. Pat dry with a paper towel.
  3. In a large mixing bowl, combine the drained zucchini, eggs, and Parmesan cheese until well mixed.
  4. Press the zucchini mixture into the bottom of the prepared baking dish to form an even crust.
  5. In a skillet, cook the ground beef, diced onion, and mushrooms over medium heat until the meat is browned and onions are soft. Drain excess fat.
  6. Stir in the pizza sauce, green bell pepper, oregano, garlic powder, and black pepper into the meat mixture.
  7. Spread the meat and veggie mixture evenly over the zucchini crust.
  8. Top with mozzarella and cheddar cheese.
  9. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
  10. Allow to cool for a few minutes before slicing and serving.

Notes

For a vegan option, replace Parmesan cheese with nutritional yeast and use plant-based ground meat.
