Description

Delicious Zucchini Rollatini filled with a rich cheese and sausage mixture, perfect for a comforting meal.


Ingredients

  • 3 small/medium zucchini
  • sliced into 28 very thin slices
  • 1 cup ricotta cheese
  • 1 1/2 cups mozzarella cheese
  • 1/2 pound Italian sausage
  • ground
  • 1/2 cup parmesan cheese
  • grated
  • 1 whole egg
  • 1/2 teaspoon garlic powder
  • 2 tablespoons fresh basil
  • chopped
  • 1 tablespoon fresh parsley
  • chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground sausage until browned, about 5-7 minutes, then drain excess fat.
  3. In a large bowl, combine the cooked sausage, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, garlic powder, basil, parsley, salt, and black pepper. Mix well.
  4. Take one slice of zucchini and place about 2 tablespoons of the cheese mixture at one end, then roll up tightly. Repeat with remaining zucchini slices.
  5. Place the zucchini rollatini seam-side down in a baking dish. Top with remaining mozzarella cheese.
  6. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbly and golden.
  7. Let cool for a few minutes before serving. Enjoy your Zucchini Rollatini!

Notes

Feel free to add extra vegetables or spices to the filling as per your taste. These rollatini can also be made ahead and stored in the fridge before baking.
