Description

A deliciously rich Apple Crumble Cheesecake that combines creamy cheesecake with spiced apple filling and a crunchy crumble topping.


Ingredients

  • 5 Apples cored and peeled
  • ⅔ cup Brown sugar
  • 1 teaspoon Cinnamon
  • ½ teaspoon Nutmeg
  • 2 tablespoon Lemon juice
  • 4 tablespoon Water
  • ½ cup Butter unsalted
  • 4 teaspoon Cornstarch mixed with a little bit of water
  • 3 cups Graham crackers crumbs
  • 5.2 oz Butter melted

  • 1 tablespoon Granulated sugar
  • ½ teaspoon Cinnamon
  • 28 oz Cream cheese room temp
  • 2 teaspoon Vanilla extract
  • 1 ¼ cups Granulated sugar
  • 1 cup Sour cream
  • 4 Eggs
  • 2 tablespoon Cornstarch
  • ¾ cup Flour AP
  • ½ cup Oats rolled oats or quick oats will work
  • 1 teaspoon Cinnamon
  • ⅓ teaspoon Kosher salt
  • 3.1 oz Butter melted
  • ⅓ cup Brown sugar

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a saucepan, combine the apple filling ingredients: apples, brown sugar, cinnamon, nutmeg, lemon juice, water, and butter. Cook over medium heat until apples soften.
  3. Mix cornstarch with water and stir into the apple mixture to thicken. Remove from heat and let cool.
  4. For the crust, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon in a bowl. Press mixture into the bottom of a springform pan.
  5. In a large mixing bowl, beat cream cheese until smooth. Gradually add vanilla extract and granulated sugar, mixing well. Add sour cream and eggs one at a time, then mix in cornstarch.
  6. Pour the cheesecake mixture over the crust in the springform pan and spread it evenly.
  7. Add apple filling on top of the cheesecake layer.
  8. For the crumble topping, mix flour, oats, cinnamon, kosher salt, melted butter, and brown sugar in a bowl until crumbly.
  9. Sprinkle the crumble topping over the apple filling.
  10. Bake in the preheated oven for about 30 minutes or until set. Allow to cool before serving.

Notes

For best results, chill the cheesecake in the refrigerator for at least 4 hours or overnight before serving.
