A deliciously rich Apple Crumble Cheesecake that combines creamy cheesecake with spiced apple filling and a crunchy crumble topping.

- 5 Apples cored and peeled
- ⅔ cup Brown sugar
- 1 teaspoon Cinnamon
- ½ teaspoon Nutmeg
- 2 tablespoon Lemon juice
- 4 tablespoon Water
- ½ cup Butter unsalted
- 4 teaspoon Cornstarch mixed with a little bit of water
- 3 cups Graham crackers crumbs
- 5.2 oz Butter melted

- ½ teaspoon Cinnamon
- 28 oz Cream cheese room temp
- 2 teaspoon Vanilla extract
- 1 ¼ cups Granulated sugar
- 1 cup Sour cream
- 4 Eggs
- 2 tablespoon Cornstarch
- ¾ cup Flour AP
- ½ cup Oats rolled oats or quick oats will work
- 1 teaspoon Cinnamon
- ⅓ teaspoon Kosher salt
- 3.1 oz Butter melted
- ⅓ cup Brown sugar
Instructions
- Preheat your oven to 325°F (163°C).
- In a saucepan, combine the apple filling ingredients: apples, brown sugar, cinnamon, nutmeg, lemon juice, water, and butter. Cook over medium heat until apples soften.
- Mix cornstarch with water and stir into the apple mixture to thicken. Remove from heat and let cool.
- For the crust, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon in a bowl. Press mixture into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese until smooth. Gradually add vanilla extract and granulated sugar, mixing well. Add sour cream and eggs one at a time, then mix in cornstarch.
- Pour the cheesecake mixture over the crust in the springform pan and spread it evenly.
- Add apple filling on top of the cheesecake layer.
- For the crumble topping, mix flour, oats, cinnamon, kosher salt, melted butter, and brown sugar in a bowl until crumbly.
- Sprinkle the crumble topping over the apple filling.
- Bake in the preheated oven for about 30 minutes or until set. Allow to cool before serving.
Notes
For best results, chill the cheesecake in the refrigerator for at least 4 hours or overnight before serving.
