Description

This delightful Apple Rose Tart features beautifully arranged apple slices that resemble roses, sitting atop a sweet almond-infused filling in a buttery tart shell.


Ingredients

  • 1 partially baked tart shell
  • juice of one lemon
  • 3 to 4 apples (Granny Smith
  • Pink Lady
  • Gala
  • and/or Honeycrisp)
  • ⅓ cup + 1 tbsp granulated sugar divided
  • ½ cup almond flour
  • 3 tablespoon unsalted butter divided
  • 1 egg yolk
  • 1 pinch salt
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • honey for drizzling
  • 1 ½ cups all-purpose flour
  • ½ cup confectioner’s sugar
  • ½ teaspoon salt
  • zest of ½ a lemon
  • 9 tablespoon unsalted butter (diced and chilled)
  • 1 large egg yolk (stirred)
  • 2 to 3 teaspoon ice water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the Pate Sucree by mixing flour, confectioner’s sugar, salt, lemon zest, and chilled butter until crumbly. Add egg yolk and ice water, and mix until a dough forms. Chill for 30 minutes.
  3. Roll out the dough and fit it into a tart pan before baking it for 15 minutes until lightly golden.
  4. While the shell cools, prep the filling by mixing lemon juice, ⅓ cup sugar, almond flour, 2 tablespoons butter, egg yolk, salt, vanilla, and almond extract.
  5. Slice the apples thinly and soak in a mixture of lemon juice and 1 tablespoon sugar.
  6. Spread the almond mixture into the tart shell, then arrange the apple slices in a circular pattern on top to resemble roses.
  7. Dot the apples with remaining butter and bake for 30 minutes or until apples are tender.
  8. Drizzle with honey before serving.

Notes

For a richer flavor, you can add cinnamon to your apple mixture. Ensure your tart shell is fully cooled before adding the filling.
