This delightful Apple Rose Tart features beautifully arranged apple slices that resemble roses, sitting atop a sweet almond-infused filling in a buttery tart shell.

- 1 partially baked tart shell
- juice of one lemon
- 3 to 4 apples (Granny Smith
- Pink Lady
- Gala
- and/or Honeycrisp)
- ⅓ cup + 1 tbsp granulated sugar divided
- ½ cup almond flour
- 3 tablespoon unsalted butter divided
- 1 egg yolk
- 1 pinch salt
- ½ teaspoon vanilla extract
- ¼ teaspoon almond extract
- honey for drizzling
- 1 ½ cups all-purpose flour
- ½ cup confectioner’s sugar
- ½ teaspoon salt
- zest of ½ a lemon
- 9 tablespoon unsalted butter (diced and chilled)
- 1 large egg yolk (stirred)
- 2 to 3 teaspoon ice water
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the Pate Sucree by mixing flour, confectioner’s sugar, salt, lemon zest, and chilled butter until crumbly. Add egg yolk and ice water, and mix until a dough forms. Chill for 30 minutes.
- Roll out the dough and fit it into a tart pan before baking it for 15 minutes until lightly golden.
- While the shell cools, prep the filling by mixing lemon juice, ⅓ cup sugar, almond flour, 2 tablespoons butter, egg yolk, salt, vanilla, and almond extract.
- Slice the apples thinly and soak in a mixture of lemon juice and 1 tablespoon sugar.
- Spread the almond mixture into the tart shell, then arrange the apple slices in a circular pattern on top to resemble roses.
- Dot the apples with remaining butter and bake for 30 minutes or until apples are tender.
- Drizzle with honey before serving.
Notes
For a richer flavor, you can add cinnamon to your apple mixture. Ensure your tart shell is fully cooled before adding the filling.
