- 1 1/2 cups flour
- 1 teaspoon corn starch
- 1/4 teaspoon salt
- 3/4 teaspoons baking powder
- 1/2 cup unsalted butter
- 3/4 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 4 oz. white chocolate-chopped into small chunks
- 3/4 cup blueberries
- 2.5 oz. cream cheese-softened
- 1 Tablespoon powdered sugar
- 1/2 teaspoon vanilla
- 3–4 tablespoons blueberry jam
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, corn starch, salt, and baking powder.
- In another bowl, cream the unsalted butter and sugar until light and fluffy.
- Add the egg and vanilla to the butter mixture and mix well.
- Gradually stir in the dry ingredients until just combined.
- Fold in the white chocolate chunks and blueberries gently.
- For the filling, combine the softened cream cheese, powdered sugar, and vanilla in a small bowl until smooth.
- Spoon a small amount of cookie dough onto the baking sheet, make a small indentation in the center, fill it with blueberry jam and a little cream cheese mixture, then top with more cookie dough to cover.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Allow cooling on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, use fresh blueberries and chill the cookie dough for 30 minutes before baking to enhance the flavors and texture.
