- 1–2 Tablespoons butter
- 1 onion (diced)
- 2 medium carrots (diced)
- 3 cloves garlic (minced)
- 4 cups chicken stock
- ¼ cup cornstarch
- 1 cup milk
- 2 large potatoes (peeled and chopped into ½-inch cubes)
- 16 ounces broccoli florets (fresh or frozen)
- 1½ cups shredded sharp cheddar cheese
- ½ teaspoon salt
- ¼ teaspoon ground pepper
Instructions
- In a large pot, melt the butter over medium heat.
- Add the diced onion and carrots, sautéing until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional 1 minute.
- Pour in the chicken stock and bring to a boil.
- Add the chopped potatoes and cook until tender, about 10 minutes.
- Whisk the cornstarch into the milk and gradually add to the pot, stirring continuously.
- Add the broccoli florets and cook until heated through, about 5 minutes.
- Stir in the shredded cheddar cheese until melted, then season with salt and pepper.
- Serve hot and enjoy!
Notes
For a thicker soup, add more cornstarch mixed with a little water. This soup can be easily customized with other vegetables as well.
