  • 4 cups chicken stock
  • ¼ cup cornstarch
  • 1 cup milk
  • 2 large potatoes (peeled and chopped into ½-inch cubes)
  • 16 ounces broccoli florets (fresh or frozen)
  • 1½ cups shredded sharp cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and carrots, sautéing until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute.
  4. Pour in the chicken stock and bring to a boil.
  5. Add the chopped potatoes and cook until tender, about 10 minutes.
  6. Whisk the cornstarch into the milk and gradually add to the pot, stirring continuously.
  7. Add the broccoli florets and cook until heated through, about 5 minutes.
  8. Stir in the shredded cheddar cheese until melted, then season with salt and pepper.

Notes

For a thicker soup, add more cornstarch mixed with a little water. This soup can be easily customized with other vegetables as well.
