- 1/4 Cup Brown Sugar
- 2 Large Eggs
- 3 Tablespoons Unsalted Butter

- 2 teaspoons Vanilla Extract
- 2 Cups Buttermilk
- 1 Cup Chopped Peaches
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and brown sugar.
- In another bowl, beat the eggs and then mix in the melted butter, vanilla extract, and buttermilk until combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
- Fold in the chopped peaches gently into the batter.
- Preheat a griddle or frying pan over medium heat and lightly grease it.
- Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
- Serve warm with syrup or additional peaches on top as desired.
Notes
For thicker pancakes, use 1 3/4 cups of flour instead of 2 cups. Ensure your buttermilk is fresh for best results.
