  • 3 tbsp all purpose flour
  • 3/4 cup sour cream

  • 1 tbsp vanilla extract
  • 4 large eggs
  • room temperature
  • 1 cup toasted pecans
  • 2 1/4 cups graham cracker crumbs
  • 1/2 cup Challenge salted butter
  • melted
  • 3 tbsp sugar
  • 1 tsp ground cinnamon
  • 1 cup heavy whipping cream
  • cold
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Caramel sauce

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a bowl, combine finely chopped pecans, light brown sugar, and melted butter for the topping. Set aside.
  3. In another bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon to make the crust. Press the mixture into the bottom of the prepared pan.
  4. In a large mixing bowl, beat the Challenge cream cheese until smooth. Add the sugars and flour, mixing well.
  5. Add the cooled browned butter, sour cream, and vanilla extract. Mix until combined.
  6. Add eggs one at a time, mixing on low speed until smooth. Fold in the toasted pecans.
  7. Pour the cheesecake filling over the crust and sprinkle the pecan topping on top.
  8. Bake for 30-35 minutes or until set. Let cool before refrigerating for at least 4 hours.
  9. For the cinnamon whipped cream, beat the cold heavy cream with powdered sugar, vanilla extract, and ground cinnamon until soft peaks form.
  10. Serve the cheesecake with a dollop of cinnamon whipped cream and a drizzle of caramel sauce.
