- 1 cup toasted pecans
- 2 1/4 cups graham cracker crumbs
- 1/2 cup Challenge salted butter
- melted
- 3 tbsp sugar
- 1 tsp ground cinnamon
- 1 cup heavy whipping cream
- cold
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- Caramel sauce
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a bowl, combine finely chopped pecans, light brown sugar, and melted butter for the topping. Set aside.
- In another bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon to make the crust. Press the mixture into the bottom of the prepared pan.
- In a large mixing bowl, beat the Challenge cream cheese until smooth. Add the sugars and flour, mixing well.
- Add the cooled browned butter, sour cream, and vanilla extract. Mix until combined.
- Add eggs one at a time, mixing on low speed until smooth. Fold in the toasted pecans.
- Pour the cheesecake filling over the crust and sprinkle the pecan topping on top.
- Bake for 30-35 minutes or until set. Let cool before refrigerating for at least 4 hours.
- For the cinnamon whipped cream, beat the cold heavy cream with powdered sugar, vanilla extract, and ground cinnamon until soft peaks form.
- Serve the cheesecake with a dollop of cinnamon whipped cream and a drizzle of caramel sauce.
