- 3 large eggs
- 1 cup vegetable oil (or melted butter)
- 2 1/4 cups granulated sugar
- 2 cups shredded zucchini (about 2 medium zucchini)
- 2 teaspoons vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9×5 inch loaf pans.
- In a large bowl, whisk together flour, salt, baking soda, baking powder, cinnamon, and nutmeg.
- In another bowl, beat the eggs and then mix in vegetable oil, granulated sugar, shredded zucchini, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in chocolate chips and walnuts if using.
- Divide the batter evenly between the prepared loaf pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For best results, ensure that your zucchini is well-drained and not too watery. You can also mix in other ingredients like coconut or different types of nuts for variation.
