Ingredients
- Roasted and chopped green chilies
- Pork roast
- Olive oil
- Salt
- Pepper
- Minced garlic
- Diced onions
- Broth
- Tomatillo salsa
- Ground cumin
- Mexican oregano
- Ground cloves
- Cubed potatoes
- Lime juice
- Masa
Instructions
- In a large pot, heat olive oil over medium heat and add diced onions and minced garlic. Sauté until onions are translucent.
- Add the pork roast to the pot and brown on all sides. Season with salt, pepper, ground cumin, and Mexican oregano.
- Stir in the roasted green chilies, tomatillo salsa, cubed potatoes, and broth. Bring to a simmer.
- Cover and cook for about 30 minutes, or until the pork is tender.
- In a small bowl, mix masa with a little broth to create a slurry, then stir it into the chili to thicken.
- Add lime juice just before serving. Adjust seasoning as needed.

For additional flavor, consider adding your choice of beans or corn. You can adjust the heat level by selecting mild or hot chilis.
