- 2 tablespoons olive oil
- 2 zucchini medium sliced
- salt and pepper to taste
- 1.5 cups corn kernels cooked
- 1 lb chicken breasts skinless boneless sliced
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder
- ¼ teaspoon salt
- black pepper freshly ground
- 2 tablespoons olive oil
- 5 cloves garlic minced
- 2 tablespoons freshly squeezed lime juice
- 4 tablespoons butter divided
- ½ cup fresh cilantro chopped
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the sliced zucchini and season with salt and pepper. Cook until slightly tender, about 3-5 minutes.
- Stir in the corn kernels and cook for another 2 minutes.
- Remove the veggies from the skillet and set aside.
- In the same pan, add 2 tablespoons of olive oil and the sliced chicken.
- Season the chicken with smoked paprika, chili powder, salt, and black pepper. Cook until browned, about 5-7 minutes.
- Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in lime juice and 2 tablespoons of butter, mixing until the butter is melted and everything is well combined.
- Return the cooked veggies to the skillet and mix everything together.
- Top with the remaining 2 tablespoons of butter and let it melt before serving with chopped cilantro as a garnish.
Notes
For a spicier dish, feel free to increase the amount of chili powder. This recipe is easily adaptable; you can add other vegetables as per your preference.
