Ingredients

  • 2 tablespoons olive oil
  • 2 zucchini medium sliced
  • salt and pepper to taste
  • 1.5 cups corn kernels cooked
  • 1 lb chicken breasts skinless boneless sliced
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • black pepper freshly ground
  • 2 tablespoons olive oil
  • 5 cloves garlic minced
  • 2 tablespoons freshly squeezed lime juice
  • 4 tablespoons butter divided
  • ½ cup fresh cilantro chopped

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the sliced zucchini and season with salt and pepper. Cook until slightly tender, about 3-5 minutes.
  3. Stir in the corn kernels and cook for another 2 minutes.
  4. Remove the veggies from the skillet and set aside.
  5. In the same pan, add 2 tablespoons of olive oil and the sliced chicken.
  6. Season the chicken with smoked paprika, chili powder, salt, and black pepper. Cook until browned, about 5-7 minutes.
  7. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  8. Stir in lime juice and 2 tablespoons of butter, mixing until the butter is melted and everything is well combined.
  9. Return the cooked veggies to the skillet and mix everything together.
  10. Top with the remaining 2 tablespoons of butter and let it melt before serving with chopped cilantro as a garnish.

Notes

For a spicier dish, feel free to increase the amount of chili powder. This recipe is easily adaptable; you can add other vegetables as per your preference.
