  • 2 cups cold heavy cream
  • 3/4 cup cold heavy cream
  • 2 tablespoons powdered sugar
  • 2 teaspoons vanilla extract
  • Grated chocolate for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a saucepan, melt the chocolate and butter over low heat, stirring until smooth. Remove from heat and let cool slightly.
  3. Stir in sugar, then add eggs one at a time, mixing well after each addition. Add vanilla extract and salt.
  4. Fold in gluten-free flour until just combined. Pour batter into the prepared pan and bake for 30 minutes or until set. Let cool completely.
  5. For the mousse, melt the chocolate, then let cool. In a bowl, combine powdered sugar, cream cheese, and vanilla extract until smooth. Gradually add the cooled chocolate.
  6. In another bowl, whip the heavy cream until soft peaks form, then fold into the chocolate mixture until fully combined.
  7. Spread the mousse over the cooled cake layer and refrigerate for several hours or until set.
  8. For the whipped cream, whip cold heavy cream with powdered sugar and vanilla until peaks form. Serve the cake with whipped cream and grated chocolate on top.
