  • 1 pound ground beef

  • 1 pinch cayenne pepper
  • 2 cloves minced garlic
  • 1 ⅓ tablespoons flour
  • 2 tablespoons vodka (Optional)
  • 2 ½ cups beef broth
  • or as needed
  • 1 cup water
  • 2 ½ cups egg noodles
  • ½ cup sour cream
  • plus more for serving
  • 2 tablespoons fresh sliced chives or green onions

Instructions

  1. In a large skillet, melt the butter and vegetable oil over medium heat. Add the mushrooms, sprinkle with salt, and cook until browned and tender, about 5 minutes.
  2. Add the diced onion and ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spoon, about 7-10 minutes. Season with freshly ground black pepper and cayenne pepper.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant. Sprinkle the flour over the beef mixture and stir to combine.
  4. If using, add the vodka and let it cook for 1-2 minutes to reduce slightly. Then, gradually stir in the beef broth and water, bringing the mixture to a simmer.
  5. Add the egg noodles and cook according to package instructions, usually about 8-10 minutes, or until tender.
  6. Once the noodles are cooked, remove the skillet from heat and stir in the sour cream until well combined. Adjust seasoning with more salt and pepper as needed.
  7. Serve hot, garnished with fresh chives or green onions and an extra dollop of sour cream if desired.

Notes

For a tangier flavor, try adding a splash of Worcestershire sauce to the beef mixture. This dish pairs well with a side salad or steamed vegetables.
