- 12 ounces (340 g) skinless haddock fillets cut into halves
- ¾ teaspoon salt divided
- ½ teaspoon black pepper divided freshly cracked
- 2.5 tablespoons neutral cooking oil divided
- 1 small (80 g) onion finely chopped
- 3 cloves garlic finely minced
- ¼ teaspoon crushed red pepper flakes
- 1 pinch dried oregano
- 8 ounces (230 g) red cherry or grape tomatoes cut into halves
- 1 cup (240 ml) water
- ¼ piece of chicken bouillon cube
- ¾ teaspoon lemon zest divided
- 1 tablespoon lemon juice fresh
- ½ teaspoon honey
- 3 tablespoons finely chopped cilantro divided
Instructions
- Season the haddock fillets with ½ teaspoon salt and ¼ teaspoon black pepper.
- In a large skillet, heat 1.5 tablespoons of cooking oil over medium heat. Add the onions and garlic, and sauté until the onions are translucent.
- Add the crushed red pepper flakes and dried oregano, cooking for an additional minute.
- Stir in the halved tomatoes and cook for 2-3 minutes until they start to soften.
- Add water and the chicken bouillon cube, mix well, and bring to a simmer.
- Gently add the seasoned haddock fillets to the skillet, cover, and let them cook for 10-12 minutes or until the fish is cooked through and flakes easily.
- Finish with the remaining salt, pepper, lemon zest, lemon juice, honey, and cilantro. Stir gently to combine.
