Description

A delightful and savory Haddock in Tomato Sauce, perfect for a quick weeknight dinner. This recipe combines tender haddock fillets with a rich tomato sauce infused with garlic and spices.

Ingredients

Scale
  • 12 ounces (340 g) skinless haddock fillets cut into halves
  • ¾ teaspoon salt divided
  • ½ teaspoon black pepper divided freshly cracked
  • 2.5 tablespoons neutral cooking oil divided
  • 1 small (80 g) onion finely chopped
  • 3 cloves garlic finely minced
  • ¼ teaspoon crushed red pepper flakes
  • 1 pinch dried oregano
  • 8 ounces (230 g) red cherry or grape tomatoes cut into halves
  • 1 cup (240 ml) water
  • ¼ piece of chicken bouillon cube
  • ¾ teaspoon lemon zest divided
  • 1 tablespoon lemon juice fresh
  • ½ teaspoon honey
  • 3 tablespoons finely chopped cilantro divided

Instructions

  1. Season the haddock fillets with ½ teaspoon salt and ¼ teaspoon black pepper.
  2. In a large skillet, heat 1.5 tablespoons of cooking oil over medium heat. Add the onions and garlic, and sauté until the onions are translucent.
  3. Add the crushed red pepper flakes and dried oregano, cooking for an additional minute.
  4. Stir in the halved tomatoes and cook for 2-3 minutes until they start to soften.
  5. Add water and the chicken bouillon cube, mix well, and bring to a simmer.
  6. Gently add the seasoned haddock fillets to the skillet, cover, and let them cook for 10-12 minutes or until the fish is cooked through and flakes easily.
  7. Finish with the remaining salt, pepper, lemon zest, lemon juice, honey, and cilantro. Stir gently to combine.

Notes

Note A: If the haddock fillets are particularly long, cutting them in half ensures even cooking. Note B: Adjust the crushed red pepper flakes according to your heat preference.
