Ingredients

  • Onion
  • Carrots
  • Celery
  • Cumin
  • Granulated garlic
  • Chicken stock or turkey broth
  • Parsnips
  • Fire-roasted Hatch chiles
  • Leftover turkey
  • Salt and pepper
  • Heavy cream

Instructions

  1. In a large pot, heat oil over medium heat and sauté diced onion, carrots, and celery until softened.
  2. Add cumin and granulated garlic, stirring for about 1 minute until fragrant.
  3. Pour in the chicken stock or turkey broth and add the parsnips and fire-roasted Hatch chiles. Bring to a boil.
  4. Reduce heat and stir in the leftover turkey. Let simmer for about 20 minutes.
  5. Season with salt and pepper to taste, then stir in heavy cream before serving.
