Ingredients

- Celery
- Cumin

- Chicken stock or turkey broth
- Parsnips
- Fire-roasted Hatch chiles
- Leftover turkey

- Heavy cream
Instructions
- In a large pot, heat oil over medium heat and sauté diced onion, carrots, and celery until softened.
- Add cumin and granulated garlic, stirring for about 1 minute until fragrant.
- Pour in the chicken stock or turkey broth and add the parsnips and fire-roasted Hatch chiles. Bring to a boil.
- Reduce heat and stir in the leftover turkey. Let simmer for about 20 minutes.
- Season with salt and pepper to taste, then stir in heavy cream before serving.
