- 2 lbs Yukon Gold or Red potatoes cut into 1/2 inch cubes or slices
- 1 large shallot (approx. 50g) thinly sliced
- 3 cloves garlic minced
- 3 tbsp extra virgin olive oil or melted unsalted butter
- 1 tbsp fresh thyme leaves
- 1 tbsp fresh rosemary finely chopped
- 1 tsp sea salt
- 1/2 tsp freshly cracked black pepper
- 1/2 lemon sliced into thin rounds (optional)
Instructions
- Preheat your grill to medium-high heat.
- In a large bowl, combine the potatoes, shallot, garlic, olive oil or butter, thyme, rosemary, sea salt, and black pepper. Toss until the potatoes are well coated.
- Cut a large piece of aluminum foil and place the potato mixture in the center. Top with lemon slices if using.
- Fold the foil over to create a sealed packet, ensuring it is tightly closed to keep the steam in.
- Place the foil packet on the grill and cook for about 25-30 minutes, or until the potatoes are tender.
- Carefully remove the packet from the grill, open it up, and serve the potatoes hot.
Notes
Feel free to add other vegetables like bell peppers or corn for additional flavor and color. Adjust the herbs according to your preference for a personalized touch.
