  • skinless chicken breasts
  • 1 tbsp olive oil
  • 1 medium yellow onion
  • diced
  • 3 bell peppers

  • 4 cloves garlic
  • minced
  • 1 cup corn
  • fresh or frozen
  • 1 can black beans
  • drained and rinsed
  • 1 jar green enchilada sauce
  • ¾1 cup plain Greek yogurt
  • 2% or nonfat
  • 1 tsp chicken bouillon powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • Salt and pepper
  • to taste
  • 2 cups shredded Mexican-blend cheese
  • Fresh cilantro
  • for topping
  • Crushed tortilla chips
  • optional for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and bell peppers. Sauté for about 5 minutes or until softened.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add the chicken breasts, corn, black beans, green enchilada sauce, Greek yogurt, chicken bouillon powder, cumin, chili powder, smoked paprika, salt, and pepper. Mix well to combine.
  5. Transfer the mixture into a greased baking dish, spreading it evenly.
  6. Top with shredded Mexican-blend cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven, let it cool for a few minutes, then garnish with fresh cilantro and serve with crushed tortilla chips if desired.

Notes

Feel free to adjust the types of bell peppers based on your preference. If you’re short on time, you can use rotisserie chicken instead of cooking chicken breasts.
