- 2 large chicken breasts (about 400g)
- 2 tablespoons honey
- 3 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 3 cloves garlic

- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups cooked white or brown rice
- 2 ripe avocados
- sliced
- 1 cup cherry tomatoes
- halved
- 1 cup corn kernels
- 1/4 cup red onion
- sliced
- 3 tablespoons fresh cilantro
- chopped
- 1/2 cup Greek yogurt or sour cream (optional)
- 1/2 teaspoon chili flakes (optional)
Instructions
- In a mixing bowl, whisk together honey, lime juice, lime zest, garlic, olive oil, soy sauce, salt, and black pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Preheat the grill or skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side until fully cooked.
- Once cooked, let the chicken rest for a few minutes before slicing.
- In serving bowls, layer the cooked rice, sliced chicken, avocado, cherry tomatoes, corn, red onion, and cilantro.
- Top with Greek yogurt or sour cream and chili flakes if desired, then serve and enjoy!
